The young Laurent was born in south France in the sunny Aix-en-Provence. After learning the art of baking at the highly regarded Lenotre academy in Paris and then returning to his childhood dreams and learned to bake bread. His first passion and specialty were levain, a sourdough that allowed to rise naturally, and is made without yeast shortcuts, compromises or shortcuts.
